Spike's Slow-Simmered Greek-Seasoned Chili

This is one of those old-school, stovetop recipes that fills the kitchen with comfort and smells like something good is coming. Slow simmering the beef keeps it tender, lets the spices really sink in, and creates a rich, savory base that works perfectly for chili, chili dogs, nachos, or even spooned over baked potatoes. Cavender’s Greek Seasoning adds depth and a subtle twist that makes this recipe stand out.

Ingredients
1 lb ground beef
1 teaspoon powdered garlic
2 heaping tablespoons chili powder
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon black pepper (level)
1 tablespoon Cavender’s Greek Seasoning
1 teaspoon salt
1 large onion, chopped
Water (enough to lightly cover meat)
You’ll Need
Large, heavy-bottom skillet or saucepan

Step-by-Step Instructions
1) Start the beef low and slow
Place the ground beef into a large pan or saucepan. Add enough water to just cover the meat. This may feel different than browning beef, but this slow-boil method keeps the meat tender and evenly cooked.
Bring the pan up to a gentle simmer over medium-low heat. Break the meat apart as it cooks, stirring occasionally.
Let the beef boil slowly for 1 to 1 1/2 hours, keeping the heat low enough that it’s simmering, not rapidly boiling.

2) Add the flavor

Chopped onion

3) Simmer and stir
Continue to simmer the mixture for another 10 minutes, stirring often so the spices don’t settle on the bottom of the pan. During this final simmer, the onions will soften and the flavors will come together into a rich, savory blend.
4) Taste and adjust
