Lemon Chicken Orzo Soup

This lemon chicken orzo soup is cozy, comforting, and bursting with fresh, sunny flavor. Ingredients:
- 5 long carrots sliced thin
- 3 celery sticks sliced
- 1 yellow onion diced
- 4 heaping T minced garlic
- 2 T flour
- 2 T butter
- 1 T extra virgin olive oil
- 1 C orzo pasta
- 1 rotisserie chicken
- 6 C water
- 6 tsp chicken bouillon paste
- 1 t Cavender’s Greek Seasoning
- 1/2 c lemon juice
Instructions:
1) In stock pot sauté butter, oil, carrots, onion, and celery for 5-7 minutes. Add garlic and cook for 3 minutes.
2) Add flour and mix for 3 minutes. Pour in water and add chicken bouillon paste and mix well.
3) Add pulled rotisserie chicken and Cavender’s Greek Seasoning and bring to a boil.
4) Add orzo pasta and cook for 10 minutes making sure to stir frequently so it doesn’t stick.
5) Pour in lemon juice and stir. Enjoy!
